Sesame Soy Vinaigrette

Give this vinaigrette a try – it will quickly become a household favorite – we love it on salads, as a marinade for grilling vegetables, and is the reason “Red Rice Rocks” is such a popular one dish meal.

1/4 cup nutritional yeast flakes      

1/3 cup water

1/3 cup soy sauce

1/3 cup apple cider vinegar

2 generous tbsp tahini paste

2 cloves garlic, crushed

red chili flakes (optional)

1 1/4 – 1/2 cups vegetable oil

Using small processor, or immersion blender combine all ingredients except the oil and blend until smooth – then gradually add the oil until you have a delicious creamy dressing.

Fresh Herb Aioli

You will love this!  Such a fresh hit of herb flavour, fantastic used as a burger topping, vegetable/crudite dip or just plain old potato chips.

1/2 cup mayonnaise                      

1/2 cup sour cream or yogurt

1 tsp kosher salt

1/2 tsp freshly ground pepper

2 cloves garlic, minced

1/2 lemon – juice only

1/3 cup finely minced chives

The herb part is where it gets really personal …. use whatever fresh herbs you have on hand, and be generous with them. (at least 1/2 a cup in total)

basil, parsley (flat and curly leaf), oregano, rosemary, tarragon

Peanut Chicken Wings

In large bowl blend:

1 cup smooth peanut butter

8 cloves garlic, minced

1 cup light soy sauce

1/2 cup brown sugar

2 limes, zest and juice of

1 tsp cayenne pepper

1/2 tsp chili flakes

1/2 tsp fresh ground pepper

Blend all ingredients well, until smooth and creamy – add:

40 chicken drumettes ( or 20 chicken wings)

Toss well and turn onto baking tray (works really well if you cover baking tray with parchment paper, and you also reduce your clean up time!)  Reserve the sauce.

Bake @ 400 for 30 minutes, turn and bake another 10.  Return wings to sauce and toss once more – baking for another 15 minutes until they start to crisp up.

Delicious!  Make sure to have extra napkins handy …
