Cinnamon Bun Dough

Warm from the oven, these cinnamon knots are guaranteed to make your home smell amazing.

 

Warm, cinnamon buns, fresh from the oven oozing cinnamon and butter are a real wintery treat.  When the girls were growing up, their favourite way to use this dough was in cinnamon knots.  So much fun when my darling granddaughters Sloan and Stella are now in the kitchen helping!  I love it.

These little sweeties love helping Nana in the kitchen, and it is even more fun for Nana – never too young to learn how to make a great sweet yeast dough.  They are already well versed in making pizza dough!

Scald 1 cup milk

Pour into a bowl, adding 1/3 cup sugar, 2 tsp salt, 1/2 cup butter

Stir until the  butter has totally melted and the sugar and salt have dissolved.

Meanwhile ….., dissolve: (I use my kitchen aide stand mixer for this part)

1 tsp sugar in 1/2 cup lukewarm water

Stir in 1 tbsp (or 1 envelope) yeast

Let sit for 10 minutes to allow the yeast to bloom.  Stir and add milk/butter mixture.

Add 1 beaten egg, followed by 2 cups unbleached flour.

Stir and knead until mixed well – slowly add another 2 cups flour.  You may need to do this by hand at this point.  Knead well until the dough is soft.  It may take up to another cup of flour to get to this point and not have the dough too sticky.

Turn into a greased bowl, cover and allow to rise in a warm spot until doubled.

Tip dough onto lightly floured surface.

At this point you have a few options:

a) Cut dough into 24 equal pieces:  Set up 2 bowls, one with melted butter and the other with mixed 1/2 cup white sugar and 1 tsp cinnamon.  Dip each piece into first the melted butter, then the sugar mixture before tying into a knot and placing in a greased muffin tin.

b) Roll dough out into rectangle, brush generously with melted butter, and sprinkle over first cinnamon, then brown sugar.  Starting on the long side, roll up, leaving cut side down.  Cut into 1″ pieces and set on greased baking dish.

c) Using same method as b, once you have the rolled cinnamon buns, do not cut – instead join the ends into a circle, pinching well together.  Set onto a greased baking sheet.  Then – take scissors and snip about 2/3 of the way through all the way around.  Once you have made it around the circle, gently twist each bun to lay flat while staying attached in the middle.

Whatever method you use – now allow the dough to rest and rise again – about 30-40 minutes.

Bake at 350 for 20-25 minutes, just until golden brown.

 

 

 

Oatmeal Pecan Chocolate Chunk Cookies

I think these might be my new favourite cookie. I usually go for a crisper cookie, but these are soft and chewy and absolutely delicious.  Now that Stella is celiac, I’ve made these with only one change. Using gluten free flour blend did the trick perfectly, and they are now ready for horse show weekend!

2 cups all purpose flour
1 cup quick rolled oats
1/2 cup fine coconut flakes
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp kosher salt
1 cup brown sugar
1/2 cup white sugar
2 sticks unsalted butter, at room temperature
2 eggs
1 tsp vanilla extract
1/2 cup dark chocolate
(We really like a fine bit of chocolate throughout, so we grated it, but if you like it a bit chunkier, just roughly chop it)
1 cup pecans, chopped
large flake sea salt for garnish

Preheat the oven to 350

Combine dry ingredients in a small bowl … Flour, oats, coconut, baking powder, cinnamon and kosher salt. Stir well to combine.

In large mixing bowl cream butter with the 2 sugars. When this is light and fluffy add the eggs one at a time, beating well after each. Add vanilla.

Add the dry mixture to the egg mixture until well combined. Stir in pecans and chocolate.

Roll into 2″ balls and place on cookie sheet, about 2″ apart. Gently press down slightly.

Bake at 350 for 13-15 minutes.

The minute they come out of the oven, quickly toss on a bit of sea salt for garnish.

Makes about 4 dozen cookies.

Going into the oven, these were a little softer than with traditional flour, so I didn’t flatten them at all.

As you can see by the crumbs under the cooling rack, they were a bit more crumbly but otherwise just perfect.

French Bread

Making bread at home really isn’t that hard – it just takes a bit of time. An added bonus is just how amazing your home will smell.

The house smells amazing and when you pull this french bread out of the oven you will have a hard time waiting for it to cool down enough to slice.

4 cups unbleached all-purpose flour
2 teaspoons salt
1 teaspoon distilled white vinegar
2 teaspoons active dry yeast (from a 1/4-oz package)
1 tbsp sugar
1 2/3 cups warm water (105-115°F)
3 tablespoon olive oil

Dissolve sugar in 2/3 cup of the warm water, stir in yeast. Allow yeast to bloom for 15 minutes. Set aside the other 1 cup of warm water, adding the olive oil and vinegar.

Meanwhile – stir flour and salt together. When yeast has bloomed, stir into flour mixture along with the remaining cup of warm water and olive oil/vinegar mix.

It is pretty easy to do this in either food processor or stand mixer, using the dough hook – allow the machine to do some of the kneading for you – but take the time to finish the kneading yourself to feel the texture. You want a relatively soft,but firm dough.

Place in greased bowl, turning to coat with oil – cover, and allow to rest in a warm, draft free place.

45 – 60 minutes later it should have doubled in size. punch it down, turn again and allow to rise one more time until doubled.

Separate dough in half. Roll out and form loaves. Repeat with the other half. If you happen to have french loaf pans, grease well and allow to rise again in those pans. Most of us however don’t have those pans. I used my roaster, with parchment paper separating the two loaves.

Preheat oven to 425 – on lowest rack place 9 x 13 baking pan full of boiling water (hint – put baking pan in oven first, THEN fill with boiling water). On upper rack place baking tray with bread.

Bake for 20-30 minutes until crunchy and nicely browned.

Allow to cool slightly before slicing.

Tomato Thyme Bacon Tart

Nothing screams summer like tomatoes! This tart is quick and easy to make, allowing the tomato to be the star of the show. Today’s tart was made with heirloom tomato – such a big tomato that it only took 3 slices along with a few cherry tomatoes to fill in the gaps.

This works amazingly well as either an appetizer or side dish.

Roll out 1 thawed puff pastry sheet in to 10 x 14 rectangle on lightly floured surface. Transfer to parchment lined baking sheet.

Sprinkle on 1 1/2 cups cheese (gruyere, gouda and cheddar are good choices). Leave a 2 inch border on the long sides……

Crumble cooked, crumbled bacon over the cheese (4 slices)

Slice tomatoes and layer across bacon/cheese.

Sprinkle with fresh thyme, salt and pepper.

Fold the long sides over to create a border, and fold in the short ends to create a seal.

Using a sharp knife, cut vent holes in the pastry and brush with beaten egg.

Bake at 400 until golden brown, about 30 minutes.

Sprinkle with fresh basil for serving.

Blueberry Pecan Oat Muffins

Nailed it!  Blueberries are in season right now, and that means deliciousness ….. blueberry ice cream, blueberry pie, and naturally – blueberry muffins.  The coconut and lemon really bring the tastebuds out to party.  I had a craving for blueberry and lemon together … then thought of the oat flakes I love in muffins so created this recipe out of a mash up of my other muffin recipes.  Let me know what you think.

1 1/2 cups all purpose flour

1/2 cup large oat flakes

1/2 cup raw sugar

1 tbsp baking powder

1/2 tsp kosher salt

1/4 cup toasted chopped pecans

1/4 cup toasted medium shred unsweetened coconut

zest of 1 lemon

1 large egg

1 cup milk

1/2 cup melted coconut oil

1 tsp vanilla

1 cup fresh (or frozen) blueberries (plus 12 fabulous looking berries for topping)

TOPPING

3  tbsp toasted chopped pecans

3 tbsp toasted medium shred coconut

1/2 tsp cinnamon

2 tbsp raw sugar

1 tbsp softened butter

Combine all topping ingredients and set aside.

In large mixing bowl combine first 8 ingredients and whisk to blend.

In smaller bowl beat egg, add milk, vanilla and melted coconut oil.

Gently mix liquid ingredients into dry, being careful not to overmix.  Stir in blueberries.

Once just combined, fill prepared muffin tins, and press a bit of topping into each muffin – adding 1 blueberry to the center of each muffin.

Bake at 375 for 20 minutes.

Insert a toothpick – if it comes out clean, remove from oven and allow to cool for 10 minutes before removing from muffin tin.

Raspberry Peach Pecan Galette

This recipe works really well with any berry or fruit – the pecans give the pie crust a rich, nutty, crunchy texture and flavour. Really – what is a galette? An easy way to make a pie!

DOUGH
1/2 cup pecans (toasted)
1 cup plus 2 TBSP flour
2 tsp raw sugar
1/2 tsp kosher salt
1/4 tsp cinnamon
1/2 cup (1 stick) very cold unsalted butter (in small pieces)

FILLING
2 cups raspberries
1 peach
2 tbsp cornstarch
1 1/2 tsp freshly squeezed lemon juice
1/4 cup sugar, plus a bit more to sprinkle on crust
2 tbsp milk or heavy cream

Preheat oven to 375

Once your pecans have been toasted, and cooled – pulse in food processor until they are a coarse crumble. Add flour, sugar, salt and cinnamon. Pulse just until combined. Add butter pieces and pulse just until mixture looks like a coarse crumble – a few pea sized bits are great. Transfer mixture to a large bowl and drizzle in 4 tbsp ice water and mix. If necessary add another tablespoon of water just until it comes together. Gently pat the dough into a circle, cover with plastic wrap and allow to sit in fridge for at least 1 hour. (it will keep in the fridge for 2 days or you can freeze it for a month)

Toss raspberries, cornstarch, lemon juice and 1/4 cup sugar in bowl.

Roll out dough on a lightly floured surface to a 12″ round. Carefully put on a parchment lined baking sheet.
Mound fruit mixture into centre of dough, leaving about 2″ around the edge. Fold edges over, overlapping slightly.

Brush dough with milk or cream and sprinkle raw sugar over.

Peel, and slice peach – in the center opening, arrange peach slices.

Bake until crust is dark golden brown and filling is bubbling – at least 45 minutes.

Peaches and raspberries were ripe and ready at the same time this year, so I served this with a yummy peach bursting sorbet …..

Basic White Cake

Everybody needs a basic white cake in their wheelhouse, and this is mine. Double it for a layered cake, or keep it simple – either way it is moist and delicious.

1 cup white sugar
1⁄2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1⁄2 cups all-purpose flour
1 3⁄4 teaspoons baking powder
1⁄2 cup milk

Preheat oven to 350 degrees F

Grease and flour a 9×9 inch pan or line a muffin pan with paper liners.

In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla.

Combine flour and baking powder, add to the creamed mixture alternately with the milk until batter is smooth.

Scoop batter into the prepared pan.

Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

This cake is so versatile – tonight I spooned half the batter into the pan, covered with sliced strawberries and then covered those berries with the remaining batter.

Ginger Cake with Lemon Sauce

Sometimes an old fashioned, tried and true ginger cake is so comforting you wonder how it hasn’t been made for a while! Moist and delicious this is the perfect recipe, topped with Lemon Sauce and a bit of whipped cream to create an amazing bite.

1/4 cup butter
1/4 cup sugar
1 tsp cinnamon
1 tsp ginger
1 tsp cloves
1 tsp salt
1 tsp baking powder
1 1/4 cups flour
1/2 tsp baking soda
1/2 cup molasses
1/4 tsp baking soda (YES – again)
3/4 cup boiling water
1 egg, beaten

Cream together butter and sugar.
In separate bowl mix spices, salt, baking powder and flour
Beat first baking soda into molasses until foamy and add to butter mixture
Add the second 1/4 tsp of baking soda to the boiling water and stir well
Add baking soda mixture alternately with flour mixture to butter/molasses mixture
Fold in beaten egg – the mixture will be thin

Pour into greased and floured loaf pan or 8 inch round pan.

Bake at 400 for 30 minutes.

When out of oven dust with icing sugar

LEMON SAUCE

1 lemon, grated rind and juice
1 1/4 cups boiling water
2 tbsp cornstarch
1/2 cup sugar
pinch salt
2 tbsp butter

Add lemon rind to boiling water, reduce heat and simmer for 5 minutes. In a small bowl mix cornstarch, sugar and salt. Add water gradually – stirring constantly.

Return to saucepan and cook over medium heat for 10 minutes until thickened. Lower heat and cook 5 minutes longer. Remove from heat and stir in lemon juice and butter. Serve warm over ginger cake.

Mexican Chocolate Cake with Pecan Glaze

A hint of cinnamon, a whiff of coffee, and a moist delicious chocolate cake - doesn't get much better than this!

CAKE
2 sticks (1 cup) unsalted butter
1/2 cup Dutch-process unsweetened cocoa powder
3/4 cup cold coffee, or espresso
2 cups granulated sugar
2 large eggs
1/2 cup buttermilk (if you don’t have it – use 1 tbsp lemon juice and fill to 1/2 cup with milk)
2 tablespoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt

Put oven rack in middle position and preheat oven to 350°F. Butter bundt cake pan well and dust with cocoa powder, knocking out excess.

Melt butter (2 sticks) in a 3-quart heavy saucepan over moderately low heat, then whisk in cocoa. Add coffee and whisk until smooth, then remove from heat. Whisk in separately sugar, eggs, buttermilk, and vanilla.

Sift together flour, baking soda, cinnamon, and salt into a bowl, then sift again into cocoa mixture and whisk until just combined (don’t worry if there are lumps).

Pour batter into cake pan and bake until a wooden pick or skewer comes out with a few crumbs adhering, 45 to 55 minutes. (Leave oven on just to roast pecans.)

Cool cake in pan on a rack 20 minutes, then loosen edges with a thin knife and invert onto a plate.

GLAZE

2 cups chopped pecans (71/2 ounces) Roast lightly until slightly browned – set aside.
1/2 stick (1/4 cup) unsalted butter
1/2 cup half-and-half
1/2 cup confectioners sugar
5 ounces fine-quality bittersweet chocolate (not unsweetened), finely chopped
1/4 teaspoon salt

Melt butter in a 2-quart heavy saucepan over low heat, then stir in half-and-half and confectioners sugar. Add chocolate and cook, stirring, until smooth. Remove from heat and stir in pecans and salt. Cool glaze until slightly thickened, about 5 minutes.

Spoon glaze over top and sides of cake (cake will still be warm) and spread with a small offset spatula or knife to cover completely.

Raspberry Coconut Oat Muffins

Be prepared for your house to smell fantastic when these are baking – pretty difficult to wait for them to cool enough to eat!

INGREDIENTS:
1 1/2 cups of white flour
1/2 cup oat flakes
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 cup of coconut oil, melted
1/2 cup of brown sugar
2 large eggs
3 overripe bananas
1 1/2 tsp vanilla
zest of 1/2 lemon
1 tbsp lemon juice
1 cup of sweetened shredded coconut, divided
Fresh raspberries

DIRECTIONS:
Preheat the oven to 350 degrees then coat a muffin pan with cooking spray or line with paper liners. (you can also use coconut spray)

In a small bowl, combine the flour, oat flakes, baking soda, salt, and cinnamon together, mix well. In a large bowl, beat together the coconut oil, sugar, banana, and vanilla until creamy. Add the eggs, one at a time, then continue beating until well combined, finishing with the lemon zest and juice.

Add the flour mixture to the banana mixture and stir until just combined. Add the 3/4 cup of coconut, 1 cup fresh raspberries, and gently mix them into the batter.

Spoon the batter evenly into each muffin tin. Add one fresh raspberries to each muffin, pushing them in gently. Evenly sprinkle the remaining 1/4 cup of coconut to the tops of each muffin.

Place into the oven and bake 20-25 minutes or until a tester inserted into the center comes out clean. Let the muffins cool on a rack.
