THAI STYLE SWEET AND SPICY CHICKEN SALAD

Sweet and crispy chicken salad

DRESSING

1 tbsp miso paste

1 tbsp grated ginger

Juice of 2 limes (and zest if you like it really filled with lime!)

½ garlic clove, minced

1 chopped scallion

1 tbsp sriracha sauce

1 tsp raw sugar

1 tbsp fish sauce

½ tsp kosher salt

Blend well, and gradually stir in:  ½ – ¾ cup of vegetable oil – to taste

 

MARINADE

1/3 cup Thai sweet chili sauce

2 tbsp chili paste

2 tbsp soy sauce

1 tsp grated ginger

1 minced garlic clove

 

2 good size chicken breasts (boneless, skinless)

Thin cut Chinese egg noodles (fresh is best)

Green Salad

Sesame seeds

Peanuts

Bean sprouts

 

Cut chicken into bite size pieces and allow to marinate for anywhere from 30 minutes to overnight.

A few minutes before frying stir in 1 tbsp corn starch.

 

Make a green salad using whatever ingredients are jumping out at you – make it nice and crunchy!

 

Cook the egg noodles according to package directions and allow to cool – rinse with warm water if they end up in a clump – the water always brings them back.

 

Toast the sesame seeds and peanuts

 

The chicken needs to be cooked fairly quickly so it gets nice and crispy – you can do this in a wok using a bit of peanut oil, in a fry pan, a deep fryer, or on the grill with a wok basket. 

 

While the chicken is cooking, bring the rest of the marinade to a boil – allow to boil for a few minutes until it is thick and has reduced slightly.  Stir warm into the salad dressing and allow to sit while you assemble the salad:

Mac N Cheese

I have been making lasagne without pre boiling my pasta noodles for years now, so why did it take so long to try it with elbow macaroni?  Not sure, but I will always do it that way now!  Give this a try and let me know what you think.  

Mac n Cheese

1/2 cup unsalted butter, divided

1/4 cup flour

3 cups milk

1 tbsp kosher salt

1/2 tsp freshly ground black pepper

1 tbsp dijon mustard

1 lb (450 gms) elbow macaroni

2 cups shredded cheddar cheese, divided

2 garlic cloves, chopped

1 cup panko or home made bread crumbs

2 tbsp chopped flat leaf parsley

Preheat oven to 400.  Melt 1/4 cup butter in large saucepan over medium high heat.  Add flour, and mustard,  cook, whisking constantly for 1 minute to allow the flour and butter to brown slightly.  Slowly whisk in milk until you have a smooth consistency.  Add 3 cups water and bring to a boil.  Reduce heat to a simmer and cook, whisking often until you have a thin but glossy sauce. (around 10 min)  Stir in 1 tbsp kosher salt and 1/2 tsp freshly ground pepper.

Toss dry, uncooked pasta with 1 1/2 cups grated cheese and put in 13 x 9 x 2″ baking dish.  Pour sauce over – do not stir – and cover with foil.  Bake for at least 20 minutes – check to see if the pasta is almost cooked through.

Melt 1/4 cup butter in fry pan, stir in garlic – saute lightly and toss with bread crumbs and panko until lightly browned.

Sprinkle remaining 1/2 cup of cheese over pasta, then top with bread crumb/garlic mixture.  Return to the oven for another 10 minutes or so until top is bubbling and golden brown.

This is the basic recipe – I’m pretty sure you won’t be pre-cooking your pasta before baking your own mac and cheese again!

Tonight’s version of this included:

aged white cheddar cheese and smoked gouda cheese

cubed cooked chicken

diced roasted red pepper

capers

whole grape tomatoes

The whole family loved it, and you can adapt this very easily to any leftovers or cravings in your household.  

Doukhobor Borscht

We spent 2 years living in Castlegar, BC – Doukhobor territory – and I was determined to leave there with the best authentic borsch recipe I could.  Here it is – written out in this format so that you follow each step exactly.   This is a very rich, creamy and delicious version of Borscht – nothing at all like the beet borscht. 

It is a labour of love to make, but you will be so glad you did it.  Perfect for a rainy or cold day when you are going to be inside anyway!

Boil 2 ½ quarts of water in large stock pot.  Add ½ can tomatoes.  When water is boiling, add 1 tbsp salt, drop in 5 or 6 medium potatoes, peeled and cut in half.  Add ½ cup each of grated carrot and beet, and 1 medium onion, finely chopped.

While this is cooking, get yourself another large pot or cast iron pan – melt 3 tbsp butter and add ¾ cup finely chopped onion and let sauté for a few minutes until very soft and translucent – but DO NOT brown.  Add 3 cups of canned tomatoes, and let simmer until it becomes a thick sauce.  (Cooking this well removes the acid from the tomatoes so your cream won’t curdle)

Into yet another frying pan melt 3 tbsp butter and add 2 cups shredded cabbage.  Saute but do not brown.  Allow to cook until cabbage is soft and tender.  Shred another 2 cups of cabbage to add (raw) to the borscht later.

When potatoes are tender, remove them to a large bowl, add 2 tbsp butter and mash well until they are nice and creamy – slowly adding 1 small carton of cream.  Mix well and set aside.

Add 1 1/2 cup diced raw potatoes to stockpot and ½ of the tomato sauce mixture along with 2 tbsp butter.  When diced potatoes are tender add the uncooked shredded cabbage and bring to boiling point, but DO NOT BOIL!!  When cabbage is tender, add the fried cabbage, the rest of the tomato sauce and mashed potatoes.  Add ½ cup chopped fresh green pepper and black pepper to taste.

The finishing touch is stirring in some chopped fresh dill.

Serve hot with a dollop of sour cream and a dill sprig for garnish.  We like this with piping hot biscuits right out of the oven.

Sundried Tomato and Almond Pesto

Such a great taste, easy to have on hand and in the freezer.  You can use this in a variety of ways – toss with pasta, use it for a burger topping – blend it with mayonnaise for a quick dip – spread on baguette – blend with cream cheese to serve with crackers – top grilled meat … really, so amazing to eat in so many ways.  Have fun trying, and let me know if you come up with more creative ways to get that taste of sun drenched tomatoes!

Don’t you just want to taste this?

1 cup slivered almonds, toasted until golden

4 cloves garlic

2 cups dry pack sun dried tomatoes (soak in very hot water for a few moments, then drain)

1 tsp salt                                          

1/2 tsp pepper

2/3 cup olive oil

This is easiest if you use a food processor, but possible in a mortar and pestle … just be prepared to work hard!

In food processor, pulse roasted almonds and garlic until a coarse grind.  Add tomatoes, salt and pepper.  Pulse until a smooth paste.  With the motor running add the oil in a slow, but steady stream.  Finish with any leftover tomato water from soaking them.

This can be used within a few days in the fridge, or frozen in smaller containers to use all year long.

If you can’t get the dry pack sundried tomatoes, just use the oil packed ones but drain well.

Cilantro, Jalapeno and Sunflower Seed Pesto

You are going to love this!  So versatile, you can use it to toss with pasta, spread on baguette or bun for sandwich or burger topping, or even mix it with some freshly chopped tomatoes and onions for salsa.  Try it on top of grilled meat for an extra bit of flavour.

1 small – medium jalapeno pepper, depending on your taste for spicy food

1 cup roasted sunflower seeds

Pulse until coarsely chopped

5 cloves garlic

2 cups fresh cilantro leves

1 tsp grated lime zest

juice of 1/2 lime

1 tsp salt

1/2 tsp pepper

2/3 cup olive oil

In food processor (or mortar and pestle if you are feeling like you need a good workout) combine jalapeno, roasted sunflower seeds and garlic – Pulse or mash until a coarse grind.  Add the cilantro, lime zest and juice, salt and pepper.  Pulse a few times until blended.  In a steady stream, with processor running – slowly add oil

This can be kept in the fridge for a few days, or frozen in small containers to use all year long.

All ready for the freezer!

Grilled or Wood Fire Barbecue Chicken PIzza

Either make your own pizza dough, or buy some ready made from an Italian deli – make sure it is really good quality if you aren’t making your own. Come up with your own favorite toppings, or use this version – it was a real hit at our good friend Karli’s wedding stagette!  I think the wood fire oven made all the difference, but not everybody has one of those in their back yard.  We have had great pizzas just off our grill too – so try it!  Of course, you could buy BBQ sauce too – but I just like making it so I have included that recipe.

BBQ SAUCE

  • 1 tbsp butter
  • 1 small onion, minced
  • 3 garlic cloves, minced
  • 1 1/2 tsp dried thyme
  • 1 cup ketchup
  • 1/2  cup cider vinegar
  • 2 tbsp molasses
  • 1 can or bottle beer
  • 1 cup beef broth
  • 1/4 cup hot sauce
  • zest & juice of 1  lemon or lime
  • 4 tbsp maple syrup
  • 4 tbsp soya sauce

Heat oil in heavy saucepan and saute onions until soft.  Add the rest of the ingredients and bring to a boil – allow to simmer until it has reduced and is nice and thick.  Taste to adjust for seasoning.  Sometimes just a bit of salt and pepper is all you need – but taste, taste, taste!  Get it just the way you like it.

Grill chicken breasts over indirect heat, basting with bbq sauce until cooked through, and juices run clear – allow to cool, then shred.

Grate jalapeno havarti cheese – set aside

Thinly slice red onions and cook over moderate heat until carmelized – allow to cool

Cook one side of the pizza on your grill – or in your wood fire oven – turn over and dress with:

BBQ sauce

shredded chicken

slivers of green and yellow peppers

grated cheese

carmelized onion

Return to grill or oven and cook just until cheese is bubbling and crust is golden and crunchy.

Spicy Thai Sesame Noodles

I love the flavours in this dish – serve it either hot or cold – even when you are making it the kitchen smells so inviting, you are sure to have company!

1/3 cup creamy peanut butter

1/3 cup tahini

Blend well then add:

1 tablespoon sesame oil
1/3 cup rice wine vinegar
1 tablespoon red chile flakes & 1/2 teaspoon of Siracha (Rooster Sauce)
2 tablespoons light soy sauce
1/2 cup canola oil

1 lime – squeezed

1 pound  rice noodles or chow mein noodles – softened or cooked

Amy did an amazing job slicing, dicing and mincing vegetables for the salad

1 English cucumber, halved and 1/8-inch slices
1 red bell pepper, julienned
1/3 cup finely diced red pepper

1/2 cup chopped roasted (salted) peanuts for garnish

1/3 cup roughly chopped cilantro and scallions

In a bowl, whisk together the peanut butter, sesame oil, vinegar, chiles, siratcha, and soy until smooth – add lime juice and oil.  Taste for seasoning and adjust if necessary.

Cook or soften noodles

Prepare vegetables – use your imagination when preparing this – I have suggested a few, but go ahead – throw in some snap peas, or carrots, or radishes ….

Combine all ingredients and stir well.  Garnish with peanuts, scallions and cilantro.

Quinoa Feta Salad

Quinoa

This one is for you Shae – hope you have fun making it!  xo

1/2 cup white quinoa

You can use either all white or red quinoa, but I love the look of the combination!

1/2 cup red quinoa

1 tsp salt

1 1/2 cups water (or chicken stock if you are so inclined!)

Rinse quinoa well, then combine all ingredients in pot – bring to a boil with the lid off, then turn down to a simmer, cover and allow to cook for 20 minutes undisturbed.  Remove lid, fluff with a fork, and allow to sit for at least 5 minutes to allow some of the steam to release.

Set aside to cool slightly.

1/2 cup feta, broken or cut into little pieces

1/2 cup colored peppers, diced

1/2 cup sun dried tomatoes, minced

1/3 cup black olives, sliced

1/4 cup red onion, finely diced

generous amount of fresh basil, chopped

optional:  1 cob of corn – kernels removed

I only use the corn when it is in season, and a great way to use up that extra cob you cooked!  If corn is in season … then tomatoes are too so use fresh garden tomatoes, chopped up in place of the sun dried tomatoes.

DRESSING

1 garlic clove, minced

1 tsp dry mustard powder

1/4 cup red wine vinegar

1/2-2/3 cup extra virgin olive oil

salt and pepper to taste

Combine dressing ingredients, blend well and set aside

Combine the prepared vegetables with the cooked quinoa.  The flavours really come together well if you do this when the quinoa is still slightly warm.  Pour enough dressing over to coat, and give it a good toss.  Season to taste with salt and pepper.  Always remember to keep tasting – sometimes just that little extra bit of salt and pepper make the difference you are looking for.

Looking for a full meal deal?  Add some cubed extra firm tofu and black beans – you will have such a delicious satisfying dinner in one bowl.

Burgers Mexicana

I love making burgers that pack lots of flavour into every bite.  These are guaranteed to do just that! The addition of chipotle aoili makes anything have a hint of Mexican flavours.  Feel free to add a bit of minced chipotle pepper to the burger mix as well if you like to kick the heat up a bit.

1 pound ground lean pork

1 pound ground chorizo sausage or spicy italian sausage meat

1/4 cup minced fresh herbs – basil, oregano, rosemary and parsley

2 garlic cloves, minced

1/4 cup finely sliced chives or green onions

1/2 cup monterey jack or havarti jalapeno cheese, grated

Gently toss just until ingredients are blended well and form into patties.  If you place them on a cookie sheet in the freezer for a while they will hold their shape much easier on the grill.  When you put them on the grill, gently place them on an oiled grill (or lightly oil the burger) and do not move until they have formed up.  Rotate for nice grill marks.  Flip when they are able to hold their shape, and cook through.

Grill:  avocado slices, tomato slices and onion slices

Grilling tomato and avocado slices is easier than you think – and for any vegetarian in the crowed – just use portabello mushrooms!

Chipotle Aioli:  Mix 1/2 cup mayonnaise with 1 minced chipotle pepper (in adobo sauce), 1 tbsp sliced green onions and 1 tbsp fresh lemon juice -season to taste with salt and pepper

To serve burgers:  Grill buns, then spread the both halves with the chipotle aoili – place bun on bottom bun and pile it up with the avocado, tomato and onion slices – simply divine!

Chicken Meatballs

Do you ever wonder what you can do to help when someone has a baby?  Has surgery?  Just can’t get out of the house?  Needs assistance of any kind?  Make a freezer full of ready to go meal ideas, that’s what.  This is our favourite way of helping anybody.  Just make sure you find out first what kind of food they like to eat – after all, it is about what their household needs, not what you like to eat!!  These chicken meatballs are one of the best and easiest to do – they can be frozen individually and then tossed into a large ziplock bag so that when dinner comes around they can either go on the bbq and be served with tzatsiki dip, go into a tomato sauce and become spaghetti, or just served with mashed potatoes and vegetables.  The possiblities are limited only by your imagination …

2 pounds ground lean chicken meat – please use a butcher and good quality meat

1 small onion, grated

lots of fresh herbs, minced very fine – I like basil, oregano, rosemary and parsley

2 cloves garlic (don’t overdo the garlic in case you are preparing these for a nursing mother or other sensitive eater)

1/2 cup finely ground bread crumbs

Combine all ingredients and blend well (your hands are the best possible tool), then roll into balls.  Toss lightly in flour and set on baking sheet.  Allow to freeze individually and then put all of them in a freezer container or ziplock bag – label it!
