Quinoa Feta Salad

Quinoa

This one is for you Shae – hope you have fun making it!  xo

1/2 cup white quinoa

You can use either all white or red quinoa, but I love the look of the combination!

1/2 cup red quinoa

1 tsp salt

1 1/2 cups water (or chicken stock if you are so inclined!)

Rinse quinoa well, then combine all ingredients in pot – bring to a boil with the lid off, then turn down to a simmer, cover and allow to cook for 20 minutes undisturbed.  Remove lid, fluff with a fork, and allow to sit for at least 5 minutes to allow some of the steam to release.

Set aside to cool slightly.

1/2 cup feta, broken or cut into little pieces

1/2 cup colored peppers, diced

1/2 cup sun dried tomatoes, minced

1/3 cup black olives, sliced

1/4 cup red onion, finely diced

generous amount of fresh basil, chopped

optional:  1 cob of corn – kernels removed

I only use the corn when it is in season, and a great way to use up that extra cob you cooked!  If corn is in season … then tomatoes are too so use fresh garden tomatoes, chopped up in place of the sun dried tomatoes.

DRESSING

1 garlic clove, minced

1 tsp dry mustard powder

1/4 cup red wine vinegar

1/2-2/3 cup extra virgin olive oil

salt and pepper to taste

Combine dressing ingredients, blend well and set aside

Combine the prepared vegetables with the cooked quinoa.  The flavours really come together well if you do this when the quinoa is still slightly warm.  Pour enough dressing over to coat, and give it a good toss.  Season to taste with salt and pepper.  Always remember to keep tasting – sometimes just that little extra bit of salt and pepper make the difference you are looking for.

Looking for a full meal deal?  Add some cubed extra firm tofu and black beans – you will have such a delicious satisfying dinner in one bowl.

Veggie Burgers … you WANT to eat

My first disclaimer has to be the fact that I am not a vegetarian.  Admittedly we are carnivores, and in fact, love our meat.  Although my plate definitely has a small portion of meat on it, that is the way I start to plan my meal … thinking first of what protein I am going to work with.  Imagine my surprise when I thought these were delicious!  I wouldn’t have made them at all except that those darn kids are always turning up with some dietary changes – including vegetarianism.  In an attempt to have some easy to make dinners on hand for one daughters household I thought these would be a good idea.  Turns out they were so good we had a hard time giving them away ….

1 tbsp vegetable oil

1 medium onion, finely diced

2 cloves garlic, minced

1 tbsp cumin

1 1/2 tbsp chili powder

1 19 oz can black beans – really well rinsed, drained and roughly pureed

1 tsp oregano

1/4 cup cilantro, chopped

2 tbsp parsley, chopped

2 tbsp sesame oil

1/2 cup almonds, roasted and chopped

1 cup sunflower seeds, roasted and chopped

3 cups fine bread crumbs

1/2 cup soy sauce (reduced sodium)

5 eggs

2 cups carrots, grated

2 cups oats (quick cook type)

flour and vegetable oil

In a large fry pan lightly toast your almonds and sunflower seeds until golden brown – then remove to cool and use the same pan to saute onions and garlic in oil.  Place all in large mixing bowl and let it cool down while you work on the rest.  If you have a food processor use it to pulse the nuts, and then grate your carrots and puree the black beans.  Combine all ingredients in the bowl and mix well (your hands are your best tool here)

When you have everything well blended it is time to form your patties.  This is a little trickier than meat patties as I don’t find they hold the shape quite as well.  The best idea is to take either parchment or saran paper and drop a pattie on to it.  Flatten it with either your hands (or if you are feeling aggressive use the bottom of a pot ….) then wrap well individually.  Freeze them separately then store in a large ziplock bag or a freezer container.

To cook, dredge lightly in flour and brown in vegetable oil on the stove top in a fry pan.  They won’t hold together on the bbq grate, so don’t even try that.

Try these burgers, and you will be amazed.  Even for the carnivores, like ourselves, you will just love the flavour.

We liked them served on a toasted light bun or pita shell – along with:

roasted red pepper sliced, heated through

siracha aoili

To make the siracha aioli: 1/2 cup mayonnaise with 1 tbsp siracha, 1 tbsp sambal oelek, 2 tbsp freshly chopped chives as well as salt and pepper to taste

Lemon Herb Chicken Linguine

This light and fresh summery pasta is perfect for a sunny day – takes so little effort and won’t heat up your kitchen either!

CHICKEN

4 chicken breasts

2 tbsp minced fresh herbs – basil, parsley, oregano

1 heaping tbsp dijon mustard

1 lemon – juice and zest

2 tbsp olive oil

Marinate all above ingredients in a ziplock bag for a minimum of 1 hour, and preferably overnight.  (My favorite trick is to have this already made and in the freezer, pull it out in the morning and you are ready to proceed when you get home from work!)

Grill chicken breasts until no longer pink inside, and juices run clear.  Allow to rest while you cook the pasta.

PASTA

1 pack linguine noodles (or honestly, whatever you like!)

broccoli – broken into little trees (about 1 1/2 – 2 cups) or snap peas!

1 lemon, juice and zest

1 garlic clove, minced

2 tbsp of your best extra virgin olive oil

1 tbsp roughly chopped basil

1/2 cup crumbled feta cheese

salt and pepper to taste

Cook linguine in a pot of well salted water – for the last 3 minutes toss in a generous handful of broccoli heads.  Drain pasta, reserving some of the liquid.

In large serving bowl toss the cooked broccoli and pasta with the lemon juice and zest, minced garlic, crumbled feta, basil and season to taste with salt and pepper. Drizzle the olive oil over top, and add just enough pasta water to allow you to toss the pasta easily, and it creates just a light bit of sauce.

Slice chicken on the diagonal, and serve over the pasta.

Dukka

Ready for serving

Dukka/Dukkah?  You say Dukka?  What the heck is that???  It is a blend of Middle Eastern spices that you can use in so many ways.  I like to keep a jar of it on hand.  If you have unexpected guests get it out with some good olive oil and a chunk of bread and you have an appetizer ready.  

Use it as a rub on meats before grilling, blend it with some oil and vinegar for an instant salad dressing, mix it with good mayonnaise and you have a fantastic spread for sandwiches, burgers or a dip for vegetables – the possibilities are endless.

2/3 cup almonds

1/3 cup hazelnuts

2 tbsp sesame seeds                

4 tsp chili powder

2 tsp turmeric

1 tsp onion salt

1 tsp celery salt

1 tbsp cumin seeds

1 tbsp coriander seeds

cayenne pepper to taste

Toast almonds on baking sheet until golden brown and set aside

Toast hazelnuts until golden, then rub in a dish towel to remove most of the skin

Toast sesame seeds until golden

Lightly heat cumin seeds and coriander seeds just until fragrant

When everything has roasted/toasted and been prepped allow it to cool – then pulse in food processor (or use a mortar and pestle) until you have a powdery mixture with the occasional chunk of nut left for texture.

To serve as an appetizer just cut up chunks of bread into bite size pieces and set out 2 bowls – one of oil, and one of dukka.  Dip bread into the oil, then into the spice.  

Your first taste might have you puzzled, but wanting more – next thing you know – addicted!

Crispy Crusty Mustard Potatoes

When the new small potatoes are out in the spring, this is just one more way to enjoy them!  During the winter months cut up larger potatoes.  (red potatoes are excellent this way)Image

Preheat oven to 375

8 cups small white potatoes (halved if they are on the large size)

2 tbsp grainy mustard

2 tbsp dijon mustard

2 garlic cloves, minced

1 lemon – juice and zest

2 tbsp fresh rosemary, minced

vegetable oil

1 tsp kosher salt

1 tsp freshly ground pepper

Combine all ingredients in a bowl,adding just enough oil to make things hold together, and coat the potatoes –  toss well and turn onto baking sheet.  Roast at 375 until tender, tossing once half way through, until potatoes are tender inside and have a crunchy, crispy exterior.  Sprinkle with more fresh rosemary, salt and pepper to serve.

Grilled Vegetable Salad

This summer salad is ready to go with any number of vegetables – take your pick, and use whatever greens are available to you …. today we are serving it with Sesame Soy Vinaigrette.

Grill an assortment of sweet peppers, zucchini, red onions, asparagus, fennel bulb

Wash and break greens

Toss with vinaigrette and you have a meal ready to go.

Add some toasted nuts – almonds, or pine nuts are great …

 

 

SESAME SOY VINAIGRETTE

1/4 cup nutritional yeast flakes

1/3 cup water

1/3 cup soy sauce

1/3 cup apple cider vinegar

2 generous tbsp tahini paste

2 cloves garlic, crushed

red chili flakes (optional)

1 1/4 – 1/2 cups vegetable oil

Using small processor, or immersion blender combine all ingredients except the oil and blend until smooth – then gradually add the oil until you have a delicious creamy dressing.

Vegetable Samfaina

This hearty vegetable dish is so comforting, a great meal for a vegetarian or fantastic side dish for many occasions.  Try it with whatever vegetables you have on hand and create your own favorite.

1 large white onion, roughly chopped

4 garlic cloves, minced

1 tbsp each of basil, parsley and oregano

2 smaller zucchini (quartered lengthwise and in about 1″ chunks

1 eggplant, cut in similar pieces to zucchini

2 cups mixed colored peppers – cut in rough chunks

1 28 oz can good quality tomatoes

extra virgin olive oil

kosher salt

freshly ground black pepper

Cover bottom of saucepan with olive oil and saute onions until they just start to soften and get little brown bits of carmelization.  Add garlic and the rest of the vegetables – stir well and add tomatoes. Taste for seasoning and add a bit of kosher salt and freshly ground pepper as needed.

Allow to stew at a very gentle boil until all the vegetables have softened and are tender, (about 30 minutes) but still hold their shape.  Taste again, and adjust seasonings if needed.

Asparagus with lime, feta and almonds

There is nothing like asparagus season!  During that brief time we eat it most days … for our Fathers Day Mexican Fiesta I wanted to give it a Mexican twist – complimented our main of Pork in Salsa Verde –  just the way we wanted it to.

Asparagus – break off woody parts at the end

lime

feta cheese

extra virgin olive oil

kosher salt

freshly ground black pepper

juice of 1/2 a lime

Asparagus is best if you dress it after it has been grilled or roasted.  If you are able to grill it – so much the better.  Just grill on the surface of your grill until just fork tender.  This does, of course, require a grill master – someone who actually stays with the grill and looks after it!  If you don’t have either that luxury or the weather – preheat an oven to 375 and then roast it for about 20 minutes – just until fork tender – do not overcook.

When you take it off the heat, arrange on serving dish, drizzle with olive oil, salt and pepper, then sprinkle toasted almonds and feta cheese over top – finish with a squeeze of fresh lime juice.

Delicious!

Roasted Cauliflower

Tonight I wanted cauliflower that would allow me to relax with family  and would taste great with my Mexican Fiesta themed Father’s Day dinner – this was perfect!

Preheat oven to 375

I head of cauliflower, broken into florets

3 tbsp good quality extra virgin olive oil            

1 tsp turmeric

1/2 tsp garlic powder

1/2 tsp onion powder

1 heaping tbsp grainy mustard

1/2 tsp kosher salt

1/4 tsp freshly ground pepper

juice of 1 lemon

Garnish with cilantro and scallions (green onions)

In a ziplock bag, combine all ingredients and allow to rest for at least 30 minutes.

Turn vegetables onto baking sheet – I love my clay baking sheet – no matter what I roast on it we get the perfect color and roasting carmelization.

Roast for about 30 minutes – this will depend on the size of your florets, so at 20 minutes, poke them with a fork or sharp knife … nobody likes overcooked cauliflower!

When they are just fork tender, turn into serving dish and sprinkle with roughly chopped cilantro and green onions.
